Eye Healthy Valentine's Day Recipe
This February, EyeCare America is encouraging those ages 65 and older to go online to see if they qualify for a free eye exam. As part of the campaign, celebrity chefs from around the country have contributed delicious eye-healthy desserts for two — the perfect accompaniment to any romantic Valentine's Day dinner. All recipes are made with foods filled with eye-healthy vitamins and antioxidants, both of which have been proven to help preserve eyesight.
Where'd Ya Get Those Peepers Papaya Coconut Parfait
Ingredients:
- 1 cup ripe papaya pureed
- 2 tablespoons sugar
- 1 tablespoon honey
- ¼ tablespoon lemon zest
- ¼ cup coconut flakes, toasted
- ½ cup cream, whipped
Cooking instructions:
Mash papaya with sugar, honey and lemon zest until dissolved. Delicately fold the whipped cream using a spatula. Fill 2 martini glasses, top with toasted coconut. Chill for 30 minutes before serving.
